Spicy Chai and Red Wine Poached Pears



Still searching for that perfect end to your Valentine’s Day dinner? Here at Tealish, we’ve been trying out new recipes to help you find that dish that will impress your sweetheart with your culinary prowess.

These Spicy Chai and Red Wine Poached Pears combine the warming flavoursof our Spicy Chai black tea with fruity red wine and sweet pears to create a mouthwatering dessert that’s simple, sophisticated and full of more complex tastes than your average poached pears. Thanks to the addition of Spicy Chai, this dish has the sweetness of cinnamon and aniseed, the boldness of black Assam tea, the spice of cardamom, cloves and ginger and, of course, a delightful kick from black peppercorns!

This recipe makes two pears – perfect for a couple of lovebirds 🙂

1 tablespoon Spicy Chai tea
1 tea filter
2 cups fruity red wine
1 cup orange juice
½ cup plus ¼ cup white sugar
2 pears – Anjou or Bosc, preferably
Orange slices, to garnish


  1. Place tea into filter and secure at the top with a knot. Put filter into a medium-sized saucepan along with wine, orange juice, and ½ cup sugar.
  2. Turn heat to medium high. While mixture comes to a boil, peel the pears, leaving the core and stem intact.
  3. When tea and red wine mixture is boiling, add the pears and lower heat to a simmer. Cover and let cook for about 20 minutes, gently turning pears every five minutes or so to ensure even colour (the pears will turn a beautiful bright red!)
  4. Remove pears from saucepan and let cool. Meanwhile, add the additional ¼ cup of sugar and let sauce simmer 10 more minutes, until it becomes thick and syrupy. Remove tea and transfer remaining liquid to a sealed container.
  5. Store pears and sauce separately in fridge until ready to serve. Spoon sauce over the pears and garnish with orange slices.

For that extra touch of romance, try serving both pears on one plate (just don’t fight over who gets the last bite!)
